Sumptuous seated lunch or dinner menu

Choose one item from each course plus a vegetarian option.

Starters

  • Butternut squash and ginger, veloute, squash and chilli relish, pumpkin seeds and pumpkin oil
  • London cured Scottish loch salmon, soused cucumber, crème fraîche and beetroot
  • Goosnargh duck salad, celeriac remoulade and toasted sour dough bread
  • West Country pulled pork, air-dried ham, bramley puree and pickled vegetables
  • English beetroots, Kidderton Ash goats' cheese, pomegranate and pickled walnuts

Mains

  • Traditional roast copas bronze turkey breast and leg, cranberry and sage sausage rolls and caramelised Brussels sprouts
  • Guinea fowl, chestnut and tarragon stuffed dodine, baby vegetables, truffle pomme puree and light chicken reduction
  • Braised Gloucester old spot pork, slow cooked belly, cheek dumplings, piccalilli and apples
  • Braised beef short rib, braised cabbage, pickled turnips and red wine jus
  • Galloway Bay hake fillet, wild forest mushrooms, air-dried West Country ham crips and creamed leeks
  • Pithivier of wild forest mushroom, chestnut puree and watercress salad
  • Ravioli of eggplant caviar, red pepper reduction and parmesan shavings

Desserts

  • Traditional Christmas pudding, champagne sabayon and blood orange
  • English apple and cinnamon tart tatin and cinnamon ice cream
  • Wild Bolivian dark chocolate mousse, rum cakes and raisin sorbet
  • Orange panna cotta passion fruit, citrus vierge and olive oil sorbet
  • West Country cheddar, beenleigh blue, plum chutney, celery and oat biscuits
